For appetizers, the Duck Foie Gras Terrine seasoned with brandy and paired with an apple-mango chutney offers a silk-smooth texture that is rich yet perfectly balanced; the Fresh Crab Meat and Daikon Cannelloni wrapped in radish slices with a passion fruit and grapefruit vinaigrette jelly delivers a light taste of spring and summer; bringing a creative twist inspired by mixology, the 1515 Shrimp Cocktail features plump prawns served with a tableside-blended wasabi cocktail sauce, delivering a fresh, subtly spicy flavour with an interactive dining experience. For the main course, alongside the restaurant's signature Australian and Uruguayan Wagyu beef selections, the menu introduces the Red Wine Braised Beef Short Ribs slow-cooked for eight hours to fall-off-the-bone tenderness.
