Silver Cod Baked With Eggplant & Assorted Bell Peppers

Ingredients

  • 700g cod fish 
  • 10g red capsicum, sliced 
  • 10g yellow capsicum, sliced 
  • 10g green capsicum, sliced 
  • 30g eggplant, sliced 
  • 100ml yakiniku sauce 
  • 40 ml cooking oil 
  • 20g potato starch 

Method 

  1. Marinate the cod in the yakiniku sauce. 
  2. Layer the capsicum and eggplant and put the marinated cod at the top. 
  3. Bake for 6 minutes at 250°C.
