A popular dim sum chef at Hung Tong of Kerry Hotel, Hong Kong, Chef Tang Man Ming’s expertise in the delicate bite-sized dishes is built on a strong foundation of knowledge of traditional Cantonese dim sum. In his 20 years as a chef, his passion for learning different cooking processes and innovation has set him apart from his peers.

Every one of his delicious creations has been lovingly made from the freshest ingredients using a mixture of traditional and modern techniques.

Chef Tang brings an element of surprise and wonder to traditional dim sum with fresh ingredients and new cooking methods. His vibrant menu of popular dim sum dishes includes Scallion Pancakes, Snow Pork Buns and his signature creation Lobster Bird’s Nest Dumplings.
