The Waterfall at Shangri-La Hotel, Singapore Introduces “The Brunch”

The Waterfall offers a revitalised Sunday brunch concept called “The Brunch” with unlimited servings of appetisers and premium seafood on ice, classic breakfast dishes and à la carte main courses inspired by Mediterranean flavours.  This Sunday feast comes with an assortment of desserts presented on the shelves.  Prices for “The Brunch” start from S$118 per adult. 

“The Brunch” begins on an invigorating note with a line-up of imported seafood selections at a seafood ice bar located at the entrance.  Premium seafood and marine harvest include four types of oysters, Maine lobster, Hokkaido scallop and Spanish mussel, to name a few.  Weekly specials, such as bacon-wrapped scallops and bouillabaisse, will be served.  Expert mixologists offer creative concoctions inspired by herbs from the garden at an interactive bar counter.  Diners can observe the cocktail preparation process and interact with the mixologists to understand the beneficial properties of herbs used in the cocktails.

An appetiser buffet of salads, cold cuts and assorted cheese is available.  In line with the restaurant’s culinary philosophy, expect a menu of hearty main dishes influenced by Mediterranean flavours such as Spinach and Ricotta Cheese Ravioli with Summer Ratatouille, Dover Sole “Meuniere” with Steamed Vegetables and Pan-fried Foie Gras with Toasted Brioche and a selection of Condiments.

“The Brunch” offers classic breakfast egg dishes, such as Egg Benedict with Ham or Smoked Salmon and Hollandaise Sauce, considered comfort food for many.  Meat lovers will appreciate the carving station, which will present a rotating menu of carefully selected Tomahawk steak, suckling pig loin and lamb chop from Colorado.  

The lazy Sunday may be ended on a decadent note with an assortment of desserts.  Guests can embrace wholesome and nutritious fruits in creations such as Peach and Raspberry Tiramisu, Green Apple and Banana Crumble as well as Coconut and Strawberry Blanc Manger.  The menu also includes tempting chocolate creations as Trio of Valhrona Chocolate Mousse and Chewy Brownie with Fondant Chocolate.  Freshly made crêpes from a live station may be paired with ice cream, sorbet and seasonal fresh fruits.

Talented soloist, Ms. Viva Vinson, will enhance the Sunday afternoon with her enchanting vocals, delivered with the enthusiasm and poise of an old Hollywood star.  She will perform at “The Brunch” until 30 November 2013.

“The Brunch” is priced at S$118 per adult for brunch only and S$158 for brunch with Taittinger champagne, herb-inspired cocktails and wines.  For S$198, guests can enjoy the brunch with 2005 Taittinger Brut, Brut Rose champagne, herbs-inspired cocktails and premium wines.  Prices are subject to 10 per cent service charge and prevailing government taxes, including GST.
