Paris, 20 September 2013 - to prolong the magic of gifts under the Christmas tree, François Perret, the Head Pastry Chef at Shangri-La Hotel, Paris, has given the traditional Christmas log a mischie-vous twist, creating a stunning dessert to have on the table as a final present for each guest.
Presented on a chocolate board, carved to look like real wood, five beautiful little bright red cubes are guaranteed to arouse gourmet curiosity. They are encircled by a belt with a golden buckle all made of Carupano 70% chocolate, offering a jovial reminder of Father Christmas.
The gift's delightful appearance is a prelude to its delicious flavours and textures. The strands of sugar invite guests to take their own exclusive present. Each little cube consists of a threefold fla-vour experience: a light biscuit is coated with caramel sauce, covered in crushed hazelnuts and then wrapped in a classic chocolate mousse.
"I wanted to do everything I could to help create an enjoyable occasion. The shared aspect and the individual gifts should all add to the festive atmosphere. The biscuit is flourless and it is a traditional chocolate mousse, i.e. made from a sabayon base, with beaten egg whites, whipped cream and chocolate," emphasizes François Perret.
The Christmas Log Gift will be available at Shangri-La Hotel, Paris, in La Bauhinia Restaurant, and in the hotel's lounges, from 1 to 25 December 2013, 70€ - Yule log for five people or 14€ per cube. Degustation: from 3.30pm to 6.30pm.
