Executive Sommelier Winnie Toh
Winnie started her career in wine as a commis sommelier at a three-star Michelin restaurant, Petit Nice Passedat, in Marseille, France.
She pursued her passion at Singapore's largest group of Chinese restaurants, Tung Lok, serving as the group sommelier and taking part in the opening of Singapore's first celebrity chef restaurant, Chinois by Susur Lee. She then joined Galaxy Macau, one of Macau's grandest hotels, as the group sommelier, which gave her the opportunity to host wine dinners with some of the world's top wineries such as Château Margaux, Château Lynch-Bages, Tenuta dell’Ornellaia, Château Angélus, Château Cos d'Estournel and more.
Winnie has been working at Shangri-La’s Villingili Resort & Spa since 2012. She was given the Wine Spectator’s 2013 and 2014 Award of Excellence in recognition of her continuous passion for oenology, which she showed by compiling the outstanding wine list at the resort. Her time spent in the Maldives has ignited an interest to discover sustainable wines produced across the globe. She believes strongly in sustainability and continuously builds her wine list on this conviction. The wines she personally loves the most are Pinot Noirs from all over the world.
