Executive Sommelier Winnie Toh
Winnie started her career in wine as a commis sommelier at a three-star Michelin restaurant, Petit Nice Passedat, in Marseille, France.
She pursued her passion at Singapore's largest group of Chinese restaurants, Tung Lok, where she was the group sommelier who took part in the opening of Singapore's first celebrity chef restaurant, Chinois by Susur Lee. She then joined Galaxy Macau, one of Macau's grandest hotels, as the group sommelier where she had the opportunity to host wine dinners with some of the world's top wineries, such as Château Margaux, Château Lynch-Bages, Tenuta dell’Ornellaia, Château Angélus, Château Cos d'Estournel and more.
Working at Shangri-La’s Villingili Resort & Spa since 2012, Winnie received a testimony of her continuous passion for oenology - the Wine Spectator’s 2013 Award of Excellence, which she earned for the outstanding wine list at the resort. Her time spent in the Maldives has also ignited interest to discover sustainable wines produced across the globe – a philosophy which she believes strongly in and continuously builds her wine list on. Her personal choices are Pinot Noirs from all over the world.
