Baked Vegetable Parcel


  • 300g filo pastry
  • 1 egg yolk
  • 50g green zucchini
  • 50g yellow zucchini
  • 50g celery
  • 50g carrot
  • 50g red capsicum
  • 10g thyme
  • 200g tomato, chopped
  • 50g shitake mushroom
  • 50g tomato paste


  1. Make a dry ratatouille of capsicum, carrot, celery and zucchini.
  2. Lay 2 layers of filo pastry on a flat surface and add the dry vegetable ratatouille.
  3. Roll the pastry into the desired shaped and brush with an egg wash.
  4. Bake in the oven for 12-15 minutes at 220°C until golden brown and crisp.
  5. Cook the chopped tomato with thyme and tomato paste until soft.
  6. Serve the baked vegetable parcel with tomato coulis and roasted mushroom.
