Manfred Weber, general manager of Shangri-La Hotel, Singapore, has appointed Stephane Cocu as the chef de cuisine of the urban resort’s new dining concept, Waterfall Café.  Chef Stephane’s mastery in blending herbs, smoked salts, vinegars and exotic spices makes him the perfect maestro of Waterfall Café, which serves healthy yet creative dishes inspired by Mediterranean flavours.  As the chef de cuisine, his responsibilities include formulating Waterfall Café’s menu concept for each season, gourmet merchandising and, most importantly, providing leadership to the new restaurant’s culinary operations team.

Over the last 20 years, Chef Stephane’s talents have been recognised by many Michelin-starred establishments, such as Le Crayeres in Reims, Restaurant Comme Chez Soi in Brussels and Restaurant Daniel in New York.Chef Stephane arrived in Singapore in 2011, prior to which he opened his own restaurant, L’Olivier, in Montpellier, France, in 2009.  He started his culinary journey in 1992, as an apprentice in Auberge du Moulin de Chameron, France.

Being a part of the S$66 million renovation of Garden Wing, Waterfall Café’s colonial décor amidst 15 acres of lush tropical landscape is the ideal canvas for Chef Stephane’s culinary arts.  His passion for herbs, salts, vinegars and spices allows him to innovate with fresh, seasonal produce that are readily available in Singapore.  A true advocate of eating and living well, Chef Stephane ensures that all meat and fish in Waterfall Café are from sustainable sources and are hormone and pesticide free.
