Shangri-La Hotel, Jakarta welcomes Alexandar Hekimov as the hotel’s new executive pastry chef. Chef Alex, who joined the Shangri-La family in late January 2013, is responsible for the conception of the hotel’s pastries, desserts, chocolates and sugar craft.
The friendly chef is mesmerised by the pastry world for the creativity and precision it needs to make a creation. Now that he leads the pastry team at Shangri-La Hotel, Jakarta, Chef Alex is determined to make the hotel an outstanding place for dessert and afternoon tea, and he will create pastries that are unique in flavour and presentation.
When it comes to mastering the art of creating sweet indulgence, Chef Alex believes that, in addition to practice, new places visited and new people met influence a chef’s technique on the road towards perfection. One of the chef’s favourite dishes to prepare is the plated dessert with a well-balanced flavour, such as Raspberry and Mango Souffle; Fine Chocolate Tart with Milk Chocolate Foam; and Kaffier Lime Ganache with Flur De Sol Mille-Feuille.
Chef Alex realised he had an interest in the world of cooking when he was young. Born in Bulgaria, he entered a catering school in his home town, but it was not until he went to London and watched a chocolate and sugar demonstration by Tony Hoyle, the captain of England’s national team of pastry, that he discovered his true passion for chocolate and pastry. Chef Hoyle soon became Chef Alex’s mentor. Chef Alex continued his training and mastered the study of chocolate and pastry in France.
Chef Alex has worked in various five-star hotels in Monaco, London, Rome and Las Vegas as well on award-winning cruises. He has also participated in various culinary competitions and has won two Bacardi Chef of the Year award for best dessert in 2006 and 2009.
