Kowloon Shangri-La, Hong Kong Ushers in the Year of the Horse

Kowloon Shangri-La, Hong Kong offers a variety of events for guests over the Chinese New Year holiday to make the Year of the Horse’s arrival a memorable occasion.

Brand New Chinese New Year Pudding and Cake Flavours 

This year, Executive Chinese Chef Mok Kit Keung from the Michelin two-star Shang Palace adds two creations – Walnut Puff Pastries with Date Pudding and Turnip Pudding with Whole Abalone and Black Truffle – to his list of traditional Chinese New Year puddings.  Other festive specialties, including Crispy Taro Balls with Sesame and Deep-Fried Sweetened Dumplings, and an exquisite horse-themed cake are also available to celebrate this Spring Festival.

Walnut Puff Pastries with Date Pudding 

As health continues to be a growing concern across the globe, Shang Palace introduces Walnut Puff Pastries with Date Pudding from the ever-popular selection.  Rich in vitamins and minerals, dates and walnuts are good sources of energy and are believed to be good for the health and complexion.  These benefits make this creation a perfect treat for a balanced and healthy Chinese New Year.

Turnip Pudding with Whole Abalone and Black Truffle 

Offering gourmets something more than just the classics, Shang Palace introduces Turnip Pudding with Whole Abalone and Black Truffle, another addition to the pudding family which uses premium ingredients.

“My creation represents the evolution of Chinese cooking as I like to incorporate Western ingredients into Chinese culinary culture which would not have been done previously.  This year, I have added a western touch to the traditional pudding.  The earthy flavour of Italian black truffles complements the sweetness of turnip, offering guests a unique delicate taste,” said Chef Mok.

Kung Hei Fat Choy Cake 

In addition to the new pudding categories, Pastry Chef Wins Hung has put his artistic hat on and designed a Kung Hei Fat Choy Cake.  On top of the layers of cheese mousse and mandarin-flavoured jelly is a chocolate box-shaped cover crafted with details.

“We have placed dark chocolate pieces inside and also the symbol of the year – horse – on the auspicious cake, and brushed it with 999 gold powder, which signifies wealth, abundance and prosperity for the New Year,” said Chef Wins.

Chinese New Year Goodies and Hampers  

Depicting longevity, prosperity, good health, harmony and serenity, the Five Treasures Tray is filled with five types of sea-salted nuts in a limited-edition, stylish flower‑shaped porcelain box.

Carefully sourced from around the world, the nuts have different nutrition credentials and are paired meticulously by Chef Mok with mineral-packed natural sea salts that are rare in the Hong Kong market.  The nut and salt combinations not only bring a new level of flavour to the selection, but also give the ordinary bite a unique taste.

Cashew Nuts

(India)

Produced in India, these cashew nuts are savoury and crunchy. High in linoleic acid, vitamin B1, vitamin A and many more nutrients, cashew nuts help lower the risk of cerebral stroke, cardiovascular and coronary heart diseases.  They also promote a healthy body and complexion.

Oak-Smoked Chardonnay Finishing Sea Salt

(Egersund, Norway)

Harvested off the coast of Norway, this unique natural sea salt is smoked over wood chips made from aged Chardonnay wine barrels.  It gives off a smoky flavour with a hint of fruitiness.  The taste is further enriched with herbs, curry powder, black pepper and onion.

Brazil nut

Brazil nuts are good source of mineral magnesium, copper, manganese and selenium, which are important cofactors for antioxidant enzymes.  They also boost the immune system and are good for hair and skin health.  In addition, Brazil nuts help relax the nerves and ease blood flow.

Black Lava Hawaiian Sea Salt

(Hawaii)

Black lava Hawaiian sea salt is harvested from the Hawaiian Pacific Sea and is blended and coloured with activated charcoal, giving it a stunning black colour with silky texture.  Without being processed, it retains its natural salty flavour and is rich in detoxifying health benefits.

Macadamia nut

(USA)

Small and round, macadamia nuts have a buttery taste with a crisp and light texture. With very low saturated fat content, it is effective in reducing cholesterol level and is beneficial to hair and skin.

Hawaiian Red Sea Salt

(Hawaii)

Coming from alaea, the red volcanic clay, Hawaiian red sea salt is notable for its dark reddish colour and has over 80 minerals.  Harvested by hand, it is unprocessed, retaining its natural richness.

Pecan

(USA)

Pecan nuts are comparatively rare in the market.  Chef Mok oven‑bakes the pecans to reduce their oiliness and give them a crunchier texture.  They have only unsaturated fat and are packed with fibre, which helps clean out the gastrointestinal system and promote digestive health.

Okinawa Sea Salt

(Japan)

Okinawa prefecture, Japan, is renowned for its production of sea salt.  Crystallised from clear seawater, this natural sea salt is packed with minerals.

Volcanic Pili Nut

(Philippines)

From natural extremes, volcanic pili nuts are rooted in rich volcanic soil.  With a light creamy texture, the nuts are rich in bio-available minerals.  They contain eight essential amino acids and have more vitamin E than all other known nuts.

Himalayan Sea Salt

(Himalayas)

Himalayan sea salt is harvested from salt mines formed from dried sea or lake beds.  These beds have been compressed underground for centuries before the salt crystals were created.  This pink sea salt has absorbed all the minerals from the soil.  It is naturally processed to retain its natural minerals.

 

Chef Mok made several attempts before he came up with the dedicated pairings according to the texture of the nut, the colour and taste of sea salt, plus the origin and characteristics of both ingredients.  Take the common cashew nut as an example: Chef Mok has meticulously paired it with oak-smoked chardonnay finishing sea salt and added an extra splash of herbs, curry powder, black pepper and onion to give the nut a unique, delicate taste.

To heighten the savoury taste of various nuts, Chef Mok used two different cooking methods, oven baking and deep frying, to balance the oil content of each nut, offering guests the perfect treat for this Spring Festival.

Classic Cantonese New Year treats, such as Crispy Taro Balls with Sesame, Deep-Fried Sweetened Dumplings and Crispy Sweetened Rosettes are also on offer.

Two Spring Dinner Menus 

From 1 January to 14 February 2014, Michelin two-star Shang Palace presents guests with two auspicious spring set dinner menus specially created by Executive Chinese Chef Mok to delight the discerning palate.  Priced at HK$8,888 per table of 12 people, the 10-course set menu features Barbecued Whole Suckling Pig or Chilled Fresh Sliced Salmon with Pomelo, Chinese Pickles and Young Ginger, Braised Shredded Fish Maw and Bird’s Nest in Chicken Broth, Sliced Abalone and Dried Oyster with Lettuce, Steamed Twin Spotted Garoupa, Sautéed Scallops Hawthorn and Seasonal Vegetables served in Golden Nest, Roasted Chicken with Crispy Lotus Roots, Fried Glutinous Rice with Air-Dried Meat, Foie Gras and Shrimp Dumpling served in Supreme Broth, Sweetened Cashew Nut Cream with Sesame Dumplings and Chinese Petits Fours.

Priced at HK$10,888 per table of 12 people, the second set menu highlights such dishes as Chilled Fresh Sliced Salmon with Pomelo, Chinese Pickles and Young Ginger or Lobster with Fresh Fruit Salad, Braised Imperial Bird’s Nest with Crab Coral and Bamboo Pith Fungus, Braised Whole Abalone with Dried Oyster Puff and Fish Maw in Oyster Sauce, Steamed Twin Spotted Garoupa, Sautéed Scallops and Pacific Clams with Assorted Mushrooms in XO Chilli Sauce, Crispy Chicken with Sliced Almond, Fried Rice with Shrimps, Conpoy, Roasted Duck and Mushrooms wrapped in Lotus Leaf, Deep-Fried Glutinous Rice Dumpling with Shrimp, Chilled Mango Cream with Pomelo and Sago and Chinese Petit Fours.

From 31 January to 14 February 2014, guests can toss for bountiful fortunes with Lo Hei Yusheng (Salad with Salmon Sashimi), and enjoy Lucky Dim Sum and Lunar New Year specialities with family and friends to welcome a prosperous year.

Five-Star Dining Celebrations 

With views of the world-famous Victoria Harbour, Angelini offers guests a semi-lunch buffet from HK$358 per person and a four-course set dinner menu at HK$680 per person between 31 January and 2 February 2014.

Presenting a tradition of over 180 years of Japanese culinary art, Nadaman offers families a relaxing and luxurious dining experience.  Available from 31 January to 3 February 2014, Chef Kojima and his team have created a special Hokkaido Bento lunch and dinner priced at HK$888 per person and HK$1,288 per person, respectively, for the Chinese New Year.  Reservations are required on or before 24 January 2014.

From 30 January to 2 February 2014, Café Kool presents guests auspicious Chinese New Year lunch and dinner buffets highlighting traditional Chinese cuisine.  The price for the festive lunch buffet starts at HK$288 per adult and HK$218 per child.  The price for the festive dinner buffet starts at HK$568 per adult and HK$468 per child.

With live music in a classic and elegant setting, guests can delight in the festive afternoon tea buffet featuring Chinese longevity noodles and delicacies at the Lobby Lounge.  The afternoon tea buffet is available from 1 to 5 p.m. between 31 January and 3 February 2014 and priced at HK$338 per adult and HK$278 per child.

For a New Year get-together, Tapas Bar is an ideal venue.  From noon to 3 p.m. between 31 January and 3 February 2014, guests can enjoy all-you-can-eat international tapas against the backdrop of Victoria Harbour.

The designated tapas menu is priced at only HK$328 per person and may be paired with one of the following beverage packages:
