Restaurant Petrus, the signature French restaurant of Island Shangri-La, Hong Kong, has launched the Carte Blanche menu, which offers an opportunity for diners to enjoy the inherent surprise of a tasting menu while still having the liberty to share personal preferences.
The Carte Blanche, which means “blank card” in French, includes dishes that are listed solely by their principal ingredients, and diners are invited to make their own selection from 16 seasonal items divided into four categories, namely “vegetable,” “fish,” “meat” and “sweet.” Then Chef de Cuisine Frederic Chabbert and Patissier Claude Guerin will surprise them with a bespoke meal consisting of mystery dishes prepared with their favourite ingredients.
Surprises of the Carte Blanche menu do not only come on a plate but also in a glass. To complement the meticulous creations of Chef Frederic and Chef Claude, Head Sommelier Nicolas Pierron will select the best wine to pair with each course on the menu.
Available during lunch on Saturday and Sunday until 28 April 2013, the four-course Carte Blanche menu is priced at HK$788 (including four glasses of wine) or HK$638 (without wine) per person; additional dishes are priced at HK$110 each.
