The Heerde, Netherlands-born chef was inspired by his father’s profession and decided to be a chef during his teen years. His career started in Holland in 1995. Since then, it has taken him to many exciting places around the world, including the Arctic.
The Dutch chef has a broad spectrum of knowledge and always tries to learn as much about everything as possible. His travels and the products he sees in the market are what usually inspire him to create his dishes. This is why his cooking style is not limited to any cuisine, but emphasises the use of pure and fresh ingredients, not combining too many ingredients to bring out their flavour and delivering the best product to keep guests satisfied and happy.
Bringing global influences from his previous experiences, Chef Mark now leads the team of versatile chefs at Shangri-La Hotel, Jakarta with his passion, drive for perfection and a “never give up” attitude.
