Angelini At Kowloon Shangri-La, Hong Kong Presents Guest Chef Paolo Raschi

Celebrated Italian Chef Paolo Raschi, mastermind of Michelin-starred Ristorante Guido, will make a guest appearance at Angelini between 5 and 9 March 2014 to present the best culinary creations from the Emilia Romagna region of Italy.

Having inherited culinary skills from his mother and grandmother since he was young, Chef Paolo has grown a great passion for gastronomic art.  With continuous attempts to apply different cooking techniques learnt into his practices, Chef Paolo has developed his own unique cooking style, combining both traditional and contemporary methods.  Influenced by local Italian surroundings and inspired by beautiful scenes of sandy coastlines and lush green countryside, he pays homage to nature through his dishes.

During his five-day sojourn at Angelini, Chef Paolo will delight Hong Kong diners with dishes that stay loyal to traditional Italian cooking and showcase food that has been ingeniously created in a simple style that highlights the purity of the ingredients used.  Guests can opt for a three-course, four-course or five-course dinner menu co-created with the restaurant’s head chef, Marco Medaglia.

The fine-dining journey will begin with cold starters, including Marinated King Prawns, Anchovies and Mediterranean Scents, and Tomato “Pappa”, Mussels, Ricotta Cheese and Basil.  Alternatively, diners can opt for hot appetisers, such as Scallops, Sautéed Herbs, Oysters and Lemon, and Lobster Soup.

Diners can also look forward to Risotto with Clams and Broccoli or Homemade Ravioli filled with Cod Fish, Raw Tomato Cream, Butter and Sage.  For the main course, a choice of Roasted Squid with Potato, Parmesan Cream and Summer Black Truffle or Rump Steak, Red Fruits and Foie Gras is available.  Guests can end the meal on a sweet note with Caramelised Pineapple with Vanilla Ice Cream or Chef Paolo’s Cassata.  

The three-course dinner menu is priced at only HK$780 per person, the four-course dinner menu is priced at just HK$880 per person and the five-course dinner menu is priced at HK$980 per person.
