To celebrate the successful return of Crealto, the Nespresso Grand Cru, Island Shangri-La, HongKong has partnered with Nespresso for an exclusive pre-launch of this limited-edition coffee from 1 Septemberto 14September 2013.
During the two-week promotion, guests will be able to enjoy the coffee both in its original form andwhen transformed into scrumptious dishes and delectable chocolate treats.At Restaurant Petrus on Level 56, Chef Frederic Chabbert, Chef de Cuisine and Chef Claude Guerin, Chef Patissier – inspired by Crealto – have come up with special recipes for guests to savour.
“I love coffee. We have been working very closely with Nespresso to come up with these distinctive coffee dishes for our guests, taking French dining experience to a new level. Guests will be able to experience how coffee can complement and give special character to the dishes.” said Chef Chabbert.
Fifty-one floors below, Area Pastry Chef Alain Guilleton Level 5has created a selection of chocolate treatsusing Crealto coffee, which are available for sale at Island Gourmet, including the ‘Crealto macaroon’, the ‘Chocolate, Crealto and hazelnut crunch’ and the ‘Crealto chocolate stick combination’. For the Crealto chocolate stick, guests can choose from the four flavours below:
- Anis and Crealto coffee chocolate stick
- Crunchy almond praline, Crealto coffee chocolate stick
- Crealtocoffee orange chocolate stick
- Crealtocoffee almond chocolate stick
“Having the characteristics of the Crealtocoffee flavour in mind, I came up with different ideas to combine it with chocolate that would bring the most out of this special ingredient. The distinct flavour of anis, the sourness of orange, and different textures of praline, ganache and crunch.” Chef Alain said.
The dishes served at Restaurant Petrus include ‘Crealto duck foiegras, fresh sauteed cherry, rhubarb/coffee sauce’;‘Roasted duck breast à la Crealto, coffee/caramelized almond’ and ‘Café Au Lait, textures of Crealto coffee and milk’priced at HK$380*, HK$640* and HK$160*, respectively. At Island Gourmet, the Crealto macaroon, the Chocolate, Crealto and hazelnut crunch are available for sale at HK$20 per piece and the Crealto chocolate stick combination are available for sale in a box of twelvefor HK$360or at HK$30 per piece.

The name Crealto stems from the combination of “createur” and “alto,” in reference toaltacucina (high gastronomy).
