Steamed Milk Custard with Bird’s Nest Served in Whole Orange

Ingredients

  • 1 orange
  • 12g egg white
  • 50g fresh milk
  • 8g white sugar
  • 15g preserved birds’ nest

Methods

  1. Mix egg white, fresh milk and white sugar into a large pot.
  2. Cut 2/3 of the orange, remove the pulp and steam the skin for 2 minutes.
  3. Pour in the egg white mixture and cover with a piece of plastic wrap. Steam it for 25 minutes.
  4. Place the bird nest and serve.

Tip

  • Steam the orange skin right after removing the pulp and control the steam time correctly, or else the skin will taste bitter.
