Sicilian-born Mario Prestigiovanni attended the Culinary School in Cerfali, Palermo at the age of 18 and spent the first dozen years of his culinary career working in numerous Italian regions including Tuscany and Puglia.

In 2006, Mario left his Italian homeland and spent 6 months in Thailand before moving to China where he opened an Italian restaurant in Changsha in the province of Hunan.

Mario took on the role of Chef de Cuisine at Capri Court in 2008 where he now presents his menu of traditional Italian favourites with contemporary flair.
