Master Chef Lee Keung, a veteran of the industry, attributes four factors to the success of the Summer Palace: ingredients, experience, staying on top of trends, and attention to quality. He entered the industry at fifteen, and reminisces that in those days, "fusion' was not in existence. I was taught the traditional way of cooking".
