Executive Chef Philippe Labbé of Shangri-La Hotel, Paris

Executive Chef Philipe Labbé from Shangri-La Hotel, Paris will make a guest appearance at Restaurant Petrus, from 25 November to 1 December 2009.  The sojourn in Hong Kong is part of Chef Labbé’s culinary tour of Shangri-La hotels in Singapore, Manila, Abu Dhabi, Shanghai and Kuala Lumpur, where he will orchestrate the preparation of his great French classic cuisine with a modern twist.

Three signature dishes that Chef Labbé will prepare for his Hong Kong debut include Raw Vegetables from Provence, Mango and Passion Fruit Marinated Prawns, Flowers and Herbs; Royal Sea Bream seared with Young Vegetables and Herbs as well as New Carrot Emulsion and Wild Thyme Iced Parfait, Grand Cru Chocolate Ice Cream.

The lunch and dinner menus of Chef Labbé are priced from HKD 398 and HKD 1,280 respectively, plus 10% service charge per person.
