Using fresh seafood, baby vegetables, mushrooms and more, he has crafted a unique autumn menu of sublime flavours and vibrant colours. Savour such dishes as his King Crab, Avocado and Mushroom Salad with Lemon Dressing, Crispy Suckling Pig Comfit Cooked for 24 hours, Warm Mango, Figs and Blackberries Millefeuille and Poppy Honey Sorbet.
