In celebration of the unique Hawaiian culture and heritage, Shangri-La Hotel, Singapore will showcase a three-day “Hawaiian Luau in the Gardens” from 30 November to 2 December 2012, featuring a spread of Polynesian flavours at Waterfall Café. Bringing the Hawaiian mood closer to the heart of Singapore, the luau (traditional party with feasts and entertainment) will feature music and dance performances by famous Hawaiian musician, Jeff Peterson; Hawaii’s respected guitarist, David “Chino” Montero; hula dance teacher and choreographer, Kawena Mechler; and former Miss Hawaiian Islands 2010 runner-up, Pomaikai Klein.
Nestled amidst 15 acres of lush, tropical greenery, Waterfall Café is known for its healthy yet creative dishes with a trove of fresh, seasonal produce and gourmet merchandise sourced from sustainable origins. The Hawaiian-inspired festival will present the island’s local flavours in menu selections of wholesome, flavourful creations by Executive Chef Nicola Coccia.
On 30 November 2012, guests will be served a four-course set dinner of Mango and Papaya Salad with Crabmeat, Crispy Siew Mai and Orange; Grilled Mahimahi with Turmeric Rice in Tamarind Curry Sauce; Short Ribs Braised with Brown Ale; and Hawaiian Vanilla Coconut Float with Pineapple Rum Jus and Tropical Fruit.
On 1 December 2012, the four-course set dinner comprises Wasabi and Pistachio Crusted Ahi with Coconut Scented Black Forbidden Rice and Hamakura Mushrooms; Soya Glazed Fillet of Butterfish; Braised Hawaiian Style Beef Short Ribs; and Island Cheesecake with Coconut Cream and Macadamia Nut Praline.
To end the Hawaiian-themed weekend, Waterfall Café presents a Hawaiian Sunday brunch on 2 December 2012. The experience begins with the appetiser buffet, which features Kawai Shrimp Cocktail, Tuna Tartare, Lemon Grass Coconut Fish and Waterfall Café’s signature dish, Watermelon and Tomato Salad. For the late breakfast egg dish, guests have a choice of Hawaiian Frittata, Classic Egg Benedict, Apricot Salmon Egg Benedict with Spinach and Salmon Roe on a Brioche Bread or Egg en Cocotte with Chorizo. The à la carte main course spread includes Asian Spice Double Lamb Chop with Shaved Fennel and Watercress Salad, Citrus Rice and Wine Dressing; Kiawe Grilled Ewa Chicken with Wild Lime Leaf, Marinated Mango Coulis and Basil Vinaigrette; Garlic and Herb Crusted Mahimahi; Sautéed Pacific Blue Shrimp with Soba Noodles; Steamed Sea Bass with Mixed Grilled Vegetables; and Organic Iberico Pork Chop with Glazed Smoked Cinnamon Pineapple and Corn.
To end the tropical luau on a sweet note, an assortment of desserts presented on a platter will be served at the table. Hawaiian inspired desserts such as Pineapple Upside-Down Spice Cake, Coconut Mousse with Hana Bay Rum, Chocolate Nutty and the Classic Crème Brûlée will delight all discerning guests. The platter size will vary according to the number of guests at the table.
The Hawaiian four-course set dinner includes complimentary Hawaiian cocktail and the Hawaiian Sunday includes free flowing white and red wines – both priced at S$88 per adult. About the performers:
Jeff Peterson grew up on the slopes of Haleakala, where he was introduced to the rich heritage of Hawaiian music by his father, a paniolo (Hawaiian cowboy) on the ranch. As a performer, Jeff has worked with a wide range of international musicians like Eric Clapton. Jeff has also released five solo guitar recordings featuring his slack key artistry. In addition to performing, Jeff also taught at the University of Hawaii running the guitar programme. He achieved his milestone in Hawaiian music at the 47th Annual Grammy Awards in 2005, when his record won the award for “Best Hawaiian Recording.”
David “Chino” Montero is recognised as one of Hawaii’s most talented guitarists and falsetto vocalists. He has performed and recorded with many of Hawaii’s top artists and was a founding member of the popular trio Palolo. His music featured on three Grammy nominated recordings in 2006, 2008 and 2009. Highlights include venues in Germany opening for Carlos Santana, the House of Blues in Chicago and Dallas, The Schermerhorn Symphony Centre with the Nashville Symphony Orchestra, and the 2010 World Expo in Shanghai, China.
Kawena Mechler and Pomaikai Klein
Born and raised in Hawaii, both Kawena and Pomaikai have always had a passion for music and Hawaiian culture. They are professional hula dancers and perform with some of Hawaii's top artists in Hawaii and around the world. Aside from teaching hula, Kawena also writes songs to express her creativity. Her debut solo recording, Salty Kisses, includes the Grammy-nominated musician David “Chino” Montero. Meanwhile, Pomaikai was a runner-up in Miss Hawaii Islands 2010. She is known as one of the most famous and beautiful hula dancers in Oahu.
