Shangri-La Hotel, Kuala Lumpur has appointed Chef Jean-Philippe Guiard as the new chef de cuisine of its fine dining restaurant, Lafite. Chef Guiard is expected to bring Lafite to greater heights by serving unique French cuisine to guests.
Classic French cuisine is Chef Jean-Philippe’s forte and he is introducing his exciting repertoire of dishes at Lafite. Diners are in for an exclusive and delightful immersion into classic French gastronomy amidst the elegant, luxurious setting of Lafite.
They may begin with Seabass and Oyster Tartar or Crab Mille-Feuille, moving on to the Whole Dover Sole Grenobloise with Potato Cream or Wagyu Beef Tournedos Rossini with Truffle Reduction. They can end on a sweet note with Poached Fruit Salad in Bourbon Vanilla Syrup with Raspberry Sorbet or Nougat Glace with Meringue Sticks, Berries and Orange Coulis.
All these will have them coming back for more of his other signature dishes. The chef is also showcasing his degustation menus for lunch and dinner.
It is to be expected of Chef Jean-Philippe who has distinguished himself at the Michelin two-star restaurant, Bagatelle, in Oslo, and at La Ribaudiere, a Michelin one-star restaurant in Bourg Charente, France. He also set up the Pakin Restaurant in St Petersburg and the well-known ORO Restaurant in Oslo, Norway.
Chef Jean-Philippe is originally from the city of Angouleme in south-western France. He trained at the prestigious La Rochelle Academy in France. He started as a commis chef at the La Farandole Hotel, working his way up to become chef de cuisine of Joel Robuchon, the Michelin three-star restaurant in Paris.
