Executive Chef Philippe Labbé from Shangri-La Hotel, Paris will make a guest appearance at Restaurant Petrus from 9 to 13 September 2013 to delight Hong Kong diners with his best creations from the Parisian property’s Michelin two-star restaurant, L'Abeille.
Named France’s Chef of the Year (Cuisinier de la Année) by the influential Gault & Millau 2013, Chef Labbé has been praised by the guide for his cooking as “one of the most dazzling cuisines” in Paris. He constantly exhibits creativity and daring that evolves with the seasons, and likes to delight diners with surprising blends of exceptional products.
On this second visit to Restaurant Petrus after four years, Chef Labbé will bring to Hong Kong his best selection of signature dishes, including Multi-coloured young beetroot, chilled soup with Charroux mustard; Summer Isle royal langoustine in tartare with verbena and vanilla oil, fresh raspberry just seared with Jean-Marc Montegoterro and torrefied acai seeds; Aveyron lamb roasted with herbs, golden sweet bread with Lautrec garlic, sheep cheese, spicy eggplant fondue; as well as the dessert that celebrates childhood memories, Vanilla bourbon - light cream, snow egg white, creme caramel and vanilla syrup.
The lunch menu is priced from HK$488 to HK$658 for two to four courses per person, and the degustation dinner menu is from HK$1,480 and HK$1,880 for five to nine courses per person. About Philippe Labbé
As the executive chef of Shangri-La Hotel, Paris, which he joined in 2009, Chef Labbé orchestrates the menus for La Bauhinia, the address favoured by chic Parisians, and L’Abeille, the French gastronomic restaurant, as well as the reception salons and room service.
Before being appointed executive chef of Shangri-La Hotel, Paris earlier this year, he was chef de cuisine of the Michelin two-star Château de la Chévre d’Or in Èze. He obtained professional experience in several grand hotels, including the Carlton in Cannes and the Plaza Athénée in Paris, as well as the Hotel Martinez in Cannes under the direction of Chef Christian Willer. He also worked with Chef Gérard Boyer at the Michelin three-star Les Crayères in Reims and Chef Roger Verger at Le Moulin de Mougins in Mougins. In the early 1980s, he joined the Michelin two-star La Côte d’Or in Saulieu to work with Chef Bernard Loiseau.
Chef Labbé started his culinary career after graduating from Illkirch Catering College in Strasbourg, France. As a commis chef, he was heavily influenced by the great chefs he met while working in several well-established restaurants.
