Shangri-la’s Boracay Resort & Spa, Philippines’ Rima pays homage to authentic Italian classics “From Mamma Ria, with love”

Boracay, Philippines, November 16, 2016 – Rima, Shangri-La’s Boracay Resort & Spa, Philippines’ fine-dining treehouse restaurant, will treat guests to a heart-warming pop-up dining experience called “From Mamma Ria, with love” from November 24 to 25, 2016.

The experience will feature homemade classics of southern Italian fare with a signature menu prepared live by Mrs. Maria Matera Carbotti, better known as “Mamma Ria”. Her husband, Mr. Michelangelo Carbotti, will be present as the special wine sommelier; he holds a master sommelier diploma and has over a decade’s experience as a wine sommelier.

A housewife, mother of four and a known passionate cook in the Carbottis’ household, Mamma Ria had done several pop-up dinners at some of Singapore’s upscale restaurants, where her son Andreano also worked, in the past four years.

The Carbottis come from Puglia, a region in southern Italy known for its beautiful weather, ancient farmland and a seemingly never-ending Mediterranean coastline. The region is famous for durum wheat, which when ground, produces semolina, the base for pastas.

Using the best ingredients from this region, Mamma Ria will present Orecchiette con Salsiccia e Cime di Rapa (Handmade Pasta with Sausage and Rapini); Cavatelli ai Frutti de Mare (Handmade Pasta with Seafood) and Riso, Patate e Cozze (Baked Rice, Potato and Mussels).

Orecchiette means “little ears” and comes from Apulia in southern Italy. It is typically served with a tomato-based sauce.

Cavatelli, literally meaning “little hollows,” is shaped like miniature hot dog buns.


Risotto, believed to have been introduced by the Arabs in the Middle Ages, is Italy’s short-grained rice that is comfort food at its best and incredibly versatile in pairing with other ingredients.
