Brand New, Innovative Chinese New Year Pudding and Cake Flavours
This year, Executive Chinese Chef Mok Kit Keung at the Michelin two-star Shang Palace and Pastry Chef Wins Hung infuse a creative twist to the traditional Chinese New Year pudding and bakery of the season, and prepare for guests an innovative range of new products to welcome the Year of the Snake.
Offering gourmets something lavish and extravagant to celebrate the Chinese New Year, Shang Palace presents the first-ever 24-carat Golden Bar Pudding (in coconut flavour) at the price of HK$33,888. Limited to three pieces only, the entire golden bar pudding is coated with edible gold leaf, and each comes with two pieces of real 24-carat gold coins embossed with the logo of Shang Palace. All orders for this special edition pudding must be placed and paid for seven days in advance. Also available in small quantities, the 999.9 Golden Bar Pudding (in coconut flavour) is priced at HK$1,388 and each has two pieces of golden marzipan embossed with the logo of Shang Palace.
As the coffee trend continues to grow in popularity across the city, Chef Mok introduces Blue Mountain Coffee Pudding, another inventive addition to the pudding family using high-quality Jamaican coffee powder.
“Breaking through the boundary is my motto and I always like to incorporate Western ingredients into traditional Chinese culinary culture. A coffee lover or not, guests will find the unique aroma of Blue Mountain coffee alluring,” said Chef Mok.
In addition to the new pudding categories, Pastry Chef Wins Hung also put his creative hat on and designed a Fortune Cake reminiscent of the Chinese New Year must-have fruit – mandarin orange. Made with layers of almond sponge cake and mandarin flavoured cream, the auspicious cake is covered with white chocolate sprayed with edible orange food colouring. “The Fortune Cake in Mandarin Shape is the result of our effort to constantly come up with a product that is out of the ordinary, and hopefully, to set a new trend for the Chinese New Year. The cake can be enjoyed with Chinese or Western tea, coffee or any other drink. In Cantonese, mandarin orange is pronounced as “kum” which literally means gold. It signifies wealth, abundance and prosperity for the New Year. With its symbolic connotation and delectable sweet taste, this cake appeals to guests of all ages,” said Chef Wins.
Chinese New Year Cookies and Hampers
Depicting uniqueness, completeness, elitism and togetherness, the Chinese Zodiac Oneness cookies are made with white lotus seed paste or red bean paste and crispy biscuits, and brushed with gold powder that is believed to be good for health and complexion. From 1 to 28 February 2013, Michelin two-star Shang Palace presents guests with two auspicious spring set dinner menus, specially created by Executive Chinese Chef Mok Kit Keung to delight the discerning palate. Priced at HK$8,888 per table of 12 people, the 10-course set menu features Barbecued Whole Suckling Pig or Chilled Fresh Sliced Salmon with Pomelo, Chinese Pickles and Young Ginger; Braised Shredded Fish Maw in Chicken Broth with Bird’s Nest; Stewed Sliced Abalone with Dried Oysters with Lettuce; Steamed Twin Spotted Garoupa; Sautéed and Deep-Fried Prawns with Green Vegetables; Roasted Chicken with Crispy Lotus Roots; Fried Sticky Rice with Air Dried Meat; Stewed E-Fu Noodles Flavoured with Abalone Sauce; Sweetened Cashew Nuts with Sesame Dumplings; and Chinese Petits Fours.
